Pasteles de gloria are traditional almond-based sweets associated with Jijona and the Alicante area. These small marzipan pastries typically conceal a sweet-potato or similar sweet filling. They are popular during the festive season and offer a different experience from a bar of turrón.

Polvorones are crumbly Spanish Christmas biscuits traditionally prepared with flour, fat, sugar and almonds. Their delicate, sandy texture comes from carefully handling the dough and, in many recipes, toasting the flour before baking. This home recipe offers the familiar flavour of cinnamon and lemon.
