Jijona Nougat for Restaurants: Cream, Liquid Topping and Bulk Blocks

Jijona turrón is not just a Christmas confection. In professional kitchens it can add toasted-almond flavour, texture and body to sauces, pastries, ice cream and savoury tapas. The right product format matters: a 1 kg nougat topping, a larger liquid preparation and a solid block behave differently in a recipe.

Which form of Jijona nougat is best for your business?

1 kg nougat topping for restaurants and caterers

A pourable or spreadable topping is convenient for small batches, canapés, plated desserts and sauces. Our Jijona nougat topping is sold in a 1 kg container. Check the actual texture, almond percentage and technical sheet before using it in a standardised recipe.

Liquid nougat for ice-cream shops and pastry kitchens

Liquid or refined nougat preparations can help deliver a consistent flavour in ice-cream mixes, mousses and larger production runs. Larger formats are available in our professional range, including references sold in 5 kg and 11 kg sizes. These products are not necessarily interchangeable with pure almond paste: recalculate sugars and fats when adapting a recipe.

Nougat blocks for cutting, blending and filling

Solid blocks are suitable for portioning, grating, mixing into pastry fillings or processing into sauces. Check the product’s fat separation, consistency and storage requirements before planning a large batch.

How to use nougat in savoury cooking without making it too sweet

Starting dosage

A useful first kitchen trial is 10–20 g of nougat cream per 100 ml of unsweetened stock or cream. Add it gradually, taste and balance with lemon, a mild vinegar, salt or an unsweetened garnish. Concentration and sweetness vary by product.

Base sauce for 10 pork tapas

Heat 250 ml defatted meat stock with 100 ml cooking cream and whisk in 45 g Jijona nougat cream. Add approximately one small teaspoon of sherry vinegar. Blend, season and keep the sauce thin enough to coat the back of a spoon. Avoid long, vigorous boiling.

Vinaigrette for 10 squid or salad tapas

Blend 40 g nougat cream with 60 ml mild olive oil, 50 ml water, 25 ml white-wine vinegar, salt and a few drops of lemon juice. Add extra water if needed. Dress the dish just before serving.

Portion costing: how much nougat does each tapa use?

Worked example

If a batch uses 40 g of cream across 10 tapas, the consumption is 4 g per tapa. A 1 kg container would theoretically cover 250 tapas before waste. Ingredient cost per tapa is grams used multiplied by the net purchase cost per gram. This is not the total dish cost: account for other ingredients, labour, energy, waste and tax.

An operational tip

Weigh cream for each portion and record the result in your recipe sheet. Just 5 g extra per serving amounts to 500 g across 100 tapas.

Food safety and allergens in professional kitchens

Check labels and your HACCP plan

Almonds are a major allergen; the specific nougat formulation may also contain egg, milk or other declared allergens. Verify the manufacturer’s current technical sheet, batch traceability and cross-contact warnings. Follow the venue’s HACCP procedures for chilling, reheating and holding temperatures.

Menu ideas for bars, restaurants, caterers and pastry shops

Bars and tapas

Goat-cheese toast with Jijona cream, a small pork burger with a restrained nougat sauce, or squid finished with a light vinaigrette.

Restaurants

Sea bass with Alicante Fondillón and nougat sauce, pork tenderloin with a light cream sauce, or braised pork cheeks with a savoury almond finish.

Catering

Small cold canapés prepared with measured amounts of nougat cream, including foie gras with fresh green apple. Assemble as close to serving as possible.

Ice cream and pastry

Nougat ice cream, pastry fillings, individual mousses and chilled desserts. Reformulate the base when adding sugary or fatty nougat preparations.

Frequently asked questions

Is nougat cream the same as almond paste?

No. Almond paste can consist largely of almonds, while nougat cream contains additional ingredients and a specific proportion of sugar and fat. Do not substitute weight for weight without testing.

Can you serve nougat outside Christmas?

Yes, provided stock and storage conditions allow it. Its flavour works in year-round dishes.

Where can a professional order large quantities?

Consult the professional range and describe your kitchen use, desired format, approximate quantity and delivery date before requesting a quotation.
