Spanish Fig Bread (Pan de Higo): Traditional Recipe and Where to Buy It

Pan de higo is a traditional Spanish pressed fig cake, not a flour-based loaf. Dried figs are mixed with almonds, walnuts or other nuts and sometimes spices. It is especially associated with Andalusia and is enjoyed around Christmas as well as throughout the year.

Traditional Spanish fig bread with almonds

Ingredients for homemade pan de higo

  • 500 g dried figs
  • 50 g walnuts
  • 100 g almonds
  • 100 g wheat flour
  • 5 tablespoons milk
  • A little margarine or butter for greasing the mould

How to make fig bread step by step

  1. Cut the dried figs and almonds into small pieces.
  2. Combine the chopped figs and almonds with the flour in a mixing bowl.
  3. Chop the walnuts and add them to the mixture with the milk. Stir thoroughly so the ingredients bind.
  4. Lightly grease a small baking mould and press the mixture firmly inside.
  5. Cover with aluminium foil and bake at 160°C for approximately 30 minutes, as in the original Spanish recipe. Oven timing depends on the mould; watch carefully because the fig mixture can scorch.
  6. Let the cake cool until it can be handled safely, then remove it from the mould and allow it to cool fully before slicing.

What is Spanish pan de higo made of?

Dried figs form the base. Almonds, walnuts, dates, dried apricots, orange peel and spices are used in different regional and commercial varieties. Read product labels for the actual ingredients and allergens.

Where does fig bread come from?

Pressed dried-fruit sweets form part of the Mediterranean food tradition. Pan de higo is especially linked to Andalusia, where fig cultivation and the use of nuts have deep roots. It is difficult to attribute its invention to a single locality or period.

Pan de higo with almonds, walnuts or orange

Almonds give a firm crunch; walnuts add a more pronounced, slightly bitter note; and orange peel provides a fresh citrus aroma. There are also related sweets made from dates and dried apricots.

Fig bread for snacks and cheese boards

Serve thin slices with cheese, as a small sweet accompaniment or as a hiking snack. Dried figs contain natural sugars and fibre, while nuts add energy and unsaturated fats. It is not a treatment for high cholesterol or diabetes.

Storage and allergens

Commercial pan de higo should be stored according to its packaging. Home-made cakes containing milk and flour require appropriate hygiene and storage; follow a tested recipe. This version contains wheat gluten, milk and tree nuts.
