Here we have a picture with a block of yolk without roasting (in front) and cut into sticks. At the bottom of the photo we already have the toasted yolk, ready to serve or vacuum pack.
The yolk turron is made from almond and candied yolk, has a texture similar to marzipan, although the taste of almond marcona is present at all times. It is one of the oldest nougats or turrons, its taste is very similar to the nougat of toasted yolk, but is less sweet. The nougat of Yema is a traditional nougat in catalunya. This nougat is born from the use of the yolks left over from the preparation of soft and hard nougat. So its elaboration is born of the surplus of ingredients of other products, to be able to use all. It only carries Sugar, almond marcona and egg yolk, so it is a nougat craftsman of all life. This nougat is the same as the yolk, except that after processing with a hot iron the sugar is burned from the bar creating a layer of toasted yolk. You can see in the picture the difference between the two nougats.
