Our Guirlache (300g) is totally artisan and has limited production. We have another nougat very similar and that is of the favorites of the authors of this web: the Turronico. The difference between both is that turronic has sesame, also known as sesame or joy.
Its processing is different from the nougat of Jijona (soft) and Alicante (hard). As it has no egg white, basically the almond mixture is made with sugar, creating the characteristic caramel that gives it that special flavor.
We manufacture it in our factory of Jijona, although it is also typical the Guirlache of Alcoy and the Guirlache of Saragossa.
This nougat is associated with nougat of Arab and medieval origin, is very similar to the nougat Provençal, a typical product of walnuts or almonds with honey. The name of this nougat comes from the French word: "grillage" which means roasted. This food was popularized by the French in Aragon from the 19th century.
