How to make Jijona turrón at home?



Today we're going to explain how to make homemade soft turrón. The soft turrón is one of the most typical along with the hard one, also known as Jijona (soft) and Alicante (hard) when they have the stamp of the designation of origin.



Possibly the most difficult to imitate nougat due to the unique machinery used for it, the so-called "boixets". That's why we bring you the definitive recipe for making turrón at home.

Once the presentations are done, we start with this recipe for soft nougat that, curiously enough, shares almost the same ingredients as the hard nougat.

Ingredients of Jijona turrón (500g bar)

 300g Ground marcona almonds

 200g Honey

 100g Sugar

 1 lemon peel

 1 Cinnamon (optional)

Steps to make homemade turrón de jijona

1. We'll toast the ground almonds in a frying pan over medium heat. We recommend buying them already ground because crushing the whole almond can be a bit complicated. As always, we recommend using the marcona almond variety. Stir until they are toasted.

2. We put the 200 grams of honey together with the sugar to heat slowly in a saucepan. Stir with a wooden utensil until a single homogeneous mixture is left and remove from the heat.

3. Beat the egg white and integrate it with the previous mixture. We will continue beating and in this process some lumps will be formed. We will keep stirring until they all disappear.

4. We will incorporate the almond next to the lemon rind, only the yellow part. We will move energetically until we get a quite thick mass but that can be worked.

5. Put the mixture in some kind of mould, add the cinnamon on top and cover with a film and a weight so that it is well pressed. We will have to wait about 6 hours until the dough cools down to be able to consume it.

What are the ingredients of soft nougat and their nutritional values?

In the turrón de Jijona that we manufacture we usually use the following amount of ingredients: 70% marcona toasted almonds, 17% honey, sugar and egg albumin. When we prepare turrón in cake format we also add cinnamon on top.
