We only serve them freshly made. That is why the best time is at Christmas (Oct. Nov. Dec.).

It is a team effort that requires the coordination of the different confectioners. Many of them have dedicated their whole lives to this work.

Je n'ai pas eu les Yemitas mais les Pasteles de Yema : un peu la même chose mais enrobées de pâtes d'amande. Ce ne sont pas les premières que je goûte en Espagne et elles étaient trés bonnes.
