These cakes are made with round marzipan cakes, which are filled with potatoes and yolks. They are then closed, forming a ball that sprinkles with sugar to be rolled by hand with a special silver paper that has hardly changed design for decades. Throughout this process, women coordinated and dedicated to one of the tasks mentioned above participate.
They are one of our specialties since we have been making them for many years, when our grandmother, who was curiously called Gloria, began to manipulate them in her oven in the old town of Jijona.
We have them with Potato (moniato) or with Potato and Yolk. We also have clients who put a small piece of pumpkin (fruit frosting) and even cinnamon.
